Turkey Dressing
Yes, this is that LARGE family recipe for dressing, but is an excellent
southern style cornbread dressing for your holiday dinner.
(17-20 lb. turkey)
Cornbread
4 cups cornmeal
4 cups sifted flour
2/3 cup sugar
5 tblsp baking powder
2 tsp. salt
4 eggs
4 cups milk
1 cup soft shortening or oil
Sift together cornmeal, flour, baking soda, and salt into bowl. Add eggs,
milk, and shortening (or oil). Beat until smooth. Preheat oven to 425 and
bake in greased pan for 20-25 min. Crumble when cool.
Giblets
Steam until tender and let cool. Chop finely and save broth for later on.
Sausage
1 lb. pork sausage
3 lg. onions
Brown sausage with finely chopped onions.
Celery
Sauté 3 finely chopped stalks.
Combine:
Combine giblets and cornbread with mixture; add finely chopped pecans and a
stick of butter.
Either bake 30-40 minutes @ 350 degrees, or in a large covered Dutch oven
over very low heat, stirring every 10 minutes.
