SWISS STEAK
(FRAN IBERT)
2 Tablespoons Oil
1 Round Steak
1 Onion, chopped
1 Bell pepper, cut in long slices
1 large can Crushed Tomatoes
Salt, Pepper, and Garlic Powder to taste
Flour
Slice Round Steak into 1”x3“ slices. Dust Round Steak with Flour, Salt,
Pepper and Garlic Powder
In Large Dutch Oven, sauté Round Steak in oil, 10 minutes each side, till
brown. Remove meat to a separate plate. Add more oil if necessary, sautéing
onion and bell pepper until glazed (browned). Using a spatula, scrape meat
scraps from bottom of pan. Add meat back into pan. Add can of crushed
tomatoes, 1 tsp salt, black pepper and garlic powder. Bring to a boil, reduce
heat and simmer 1 hour. Serve over hot rice.
