Plum Cake
Ingredients:- 2 cups self-rising flour
- 3 eggs, slightly beaten
- 2 cups chopped nuts (optional)
- 1 tsp cinnamon
- 2 cups sugar
- 1 cup oil
- 1 tsp nutmeg
- 2 small jars plums w/tapioca baby food
Mix together well the following ingredients: sugar, flour, spice, and pecans (if used). Add baby food, oil, and eggs. Mix well. Bake in a greased Bundt cake pan for 1 hour in a 350° oven. Remove from pan while still hot. Glaze- 1/2 stick margarine, softened
- grated rind of 1 lemon
- juice from 1 lemon
- 1 cup powdered sugar
