Pasta with Sun-dried Tomatoes and Smoked Mozzarella
- 2 c. small tubular pasta
- 1 c. chopped fresh tomatoes
- 1/4 c. olive oil
- 1 tbsp. red wine vinegar
- 1/4 tsp. salt
- 1/4 tsp. black pepper
- 1 garlic clove, crushed
- Pinch dried oregano
- 8 oz. smoked mozzarella, cut into 1/4 in. dice
- 1/4 c. sun-dried tomatoes, chopped
- 2 tbsp. chopped fresh basil leaves
Cook pasta until al dente (about 7 min.); drain and rinse in cold water. In a large bowl, combine fresh tomatoes, oil, vinegar, salt, pepper, garlic, and oregano.
