French Onion Soup
Ingredients:- 2 tbsp extra virgin olive oil
- 3 lbs. yellow onions, diced
- 8 cups beef or vegetable broth
- 1/2 cup dry white wine
- 1 bay leaf
- 1 tsp thyme
- salt and pepper to taste
- mozzarella and parmesan cheese, shredded and mixed together (optional)
- crusty bread, sliced (optional)
Sauté onions in oil in a 6 qt stock pot over medium heat until caramelized (this can take up to an hour). Add broth, wine, bay leaf, thyme, and salt and pepper. Simmer for at least 30 minutes. If serving with bread and cheeses, place a slice of bread on the bottom of a soup bowl.
