Eggplant Cakes
1 eggplant
1 egg, slightly beaten
½ Cup flour
1 TBSP baking powder
1 TBSP sugar
½ tsp salt
Peel and dice eggplant. Boil until tender or clear
Drain and mash eggplant. Add remaining ingredients and stir to blend.
In a skillet, pour oil into skillet to fill between ¼ - ½", and heat over
medium heat, Using about ¼ cup of mixture, pour into skillet and shape into
small patties. Turn when the sides and bottom are golden brown.
Remove from oil and drain on paper towels. Lightly dust with granulated
sugar.
Makes 6-8 patties.
